Every microwave popcorn bag emphatically states how important it is to place the bag "THIS SIDE UP!!!". Why is it so important?

The way the bags are folded if you placed it upside down it would not be able to expand properly as the popcorn pops. In this case you risk tearing the bag and spraying boiling butter all over the place. This might simply mean a mess for the user to clean up, but could also end up hurting someone if they opened the microwave at the wrong time.

They place the butter on one side of the bag and that way it drips down and covers more.

Probably so that the bag unfolds properly. I think if it was upside down it would jack itself up as the sides tried to extend/unfold themselves.

The coating on the bottom is designed to convert microwave to heat.

It ensures that it opens properly: if placed face down without opening the flaps fully, it won't open; but face up the flaps are above and so they can still open easily.
