A lady at work made it and it was wonderful. It was like egg milk cheese sausage etc...anyone heard of anything like this??

Scrambled Egg Casserole

(8 servings)
12 large eggs - beaten
2 cups milk
1 and 1/2 cup soft bread crumbs
1 cup shredded American cheese
1 cup cubed fully cooked ham
1 8-ounce can of sliced mushrooms - drained
1/2 cup butter - divided
1/4 cup sliced green onions
2 Tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
In a medium saucepan, melt 2 Tablespoons of the butter. Add flour, salt and pepper; cook and stir until mixture begins to bubble. Gradually stir in milk; cook until thickened and bubbly, stirring constantly. Remove from the heat. Add cheese; mix well and set aside.
In a large skillet, sauté the ham and onions in 3 Tablespoons of the butter until onions are tender. Add eggs; cook and stir until they begin to set. Add the mushrooms and cheese sauce; mix well.

Pour into a 7 x 11 inch baking dish.
In a small sauce pan, melt remaining butter; toss with bread crumbs. Sprinkle over top of casserole.
Cover and refrigerate for 2-3 hours or overnight. Bake, uncovered, at 350ºF. for 25-30 minutes or until top is golden brown. Sprinkle with addtional green onions if desired.
Great for brunch and pretty easy to make too.

Egg Strata

8 eggs, beaten
5 cups whole milk
12 slices buttered bread, crust on (I prefer a soft crust French)
1 pound sharp cheddar cheese (or your preference - fontina is good too), shredded
1 tsp dry mustard
salt and pepper to taste
sweet paprika to taste

Using a 9x13 baking dish, layer the bread, then the cheese, and repeat until all is used but topping with cheese. Beat eggs, milk, dry mustard, salt and pepper and pour over bread and cheese mixture. Sprinkle generously with paprika. Cover and refrigerate over night.

Next day, preheat oven to 350* and bake for one hour or until golden on top. Watch very closely so not to scorch. Will puff up while baking so make sure you have a taller side dish or not to overfill.

***NOTE: can add cooked ham, bacon, sausuage and should be layered before the cheese. I have also added cooked broccoli, sauteed onions & peppers before.

Breakfast Casserole

We make this every Christmas morning it is so good. Yum!

6 slices cubed bread
8 eggs, slightly beaten
1 c. grated cheese ( sharp or american)
1 lb. sausage or shredded ham
2 c. milk (mix with egg)
1 tsp. salt
1 tsp. dry mustard ( I don't put this in)

Place bread cubes in bottom of buttered 9 x13 inch pan. Put shredded ham or sausage over bread. Pour egg mixture on top of bread and ham. Top with cheese. Can be refrigerated overnight before baking. Bake for 35 minutes at 350.

Scrambled Egg Casserole

1 c Cubed ham or Canadian bacon
1/4 c Chopped green onions
3 tb Melted butter
1 Dozen eggs, beaten
1 cn (4 oz) sliced mushrooms, drained
Cheese sauce (recipe below)
1/4 c Melted butter
2 1/4 c Soft bread crumbs
1/8 ts Paprika

CHEESE SAUCE:
2 tb Butter
2 1/2 tb Flour
2 c Milk
1/2 ts Salt
1/8 ts Pepper
1 c American or cheddar cheese


Instructions

Saute' ham and green onion in 3 Tbl. butter in a large skillet until onion is tender. Add eggs and cook over medium-high heat, stirring to form large soft curds. When eggs are set, stir in mushrooms and cheese sauce. Spoon egg mixture into a greased 13x9x2 inch baking dish. Combine 1/4 cup melted butter and bread crumbs, mixing well; spread evenly over eggs. Sprinkle with paprika. Cover and chill overnight. Uncover and bake at 350* for 30 minutes or until heated thoroughly. Yield: 12 to 15 servings.
CHEESE SAUCE: Melt butter in heavy saucepan over low heat; blend in flour, cook for 1 minute. Gradually add milk; cook over medium heat, stirring constantly, until thickened. Add salt, pepper, and cheese, stirring until cheese melts and mixture is smooth. Yield: 2 1/2 cups.

"Camper's Breakfast Hash" - 8 servings

1/4 cup butter; cubed
2 (20 oz.) pkgs. refrigerated shredded hashed brown potatoes
1 (7 oz.) pkg. brown-and-serve sausage links; cut into 1/2" pieces
1/4 cup chopped onion
1/4 cup chopped green pepper
12 eggs; lightly beaten
Salt and pepper to taste
1 cup (4 oz.) shredded Cheddar cheese

In large skillet, melt butter; add potatoes, sausage, onion and green pepper. Cook, uncovered, over medium heat 10-15 minutes or until potatoes are lightly browned, turning once.
Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook 1 to 2 minutes or until cheese is melted.

Brunch Bunch Scramble
9 to 18 servings

18 eggs
1 cup nonfat or low-fat (1%) milk
1 1/2 teaspoons dill weed
3/4 teaspoon salt, optional
1/4 teaspoon lemon juice
1 1/2 cups diced cooked lean ham
1 can (4 oz.) sliced mushrooms, drained
1/3 cup minced green onions with tops
1 tablespoon butter or cooking oil OR cooking spray

In large bowl, beat together eggs, milk, dill weed, salt, if desired, and lemon juice until well blended. Stir in ham, mushrooms and onions. In preheated 350°F oven, melt butter in 13 x 9 x 2-inch baking pan. Pour in egg mixture. Place in oven. As mixture begins to set, after about 8 minutes, pull out oven rack. Gently draw an inverted pancake turner completely across bottom and sides of pan, lifting and turning mixture to form large, soft curds. Return to oven. Repeat a few more times until eggs are thickened and no visible liquid egg remains, about 12 to 15 minutes.* Do not stir constantly.

*Although it’s best to serve scrambled eggs immediately after cooking, you can hold them for a short time. Place pan of cooked eggs over pan of hot water. (Scrambled eggs will quickly become overdone if held over direct heat.)

Club Omelette

8 eggs
1/2 cup water
Salt and pepper, to taste
Cooking spray
Ketchup
2 thin slices deli turkey
2 thin slices deli ham
2 thin slices provolone cheese
1 tomato, sliced

Beat eggs with water; season with salt and pepper.
Spray an 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium heat.

Pour in one third of egg mixture. As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set. Slide onto a plate. Invert back into skillet to cook completely, about 1 minute. Slide onto a warm serving plate. Repeat procedure to make two more omelettes.

Spread one omelette with a thin layer of ketchup. Layer with half the turkey, ham, cheese and tomato slices; top with an omelette. Repeat layers with remaining ingredients. Cut into 4 wedges. Serve immediately.
