I'm looking for a recipe for asparagus to go with a Honey Baked Ham. Any ideas?

This is my absolute favorite vegetable recipe...

I put the asparagus on a cookie sheet, drizzle with olive oil. Add a clove of pressed garlic, and sprinkle with salt and pepper. Top with a hard cheese like grated parmesean or an aged cheddar (not too much). Roast it in the oven at about 400 degrees. Do it for 10-15 minutes if you still like it a bit crisp, 15+ minutes if you like it more done. Watch it. Time depends on the thickness. Enjoy!

Asparagus with Lemon Zest Butter
Serving Size : 10

4 pound thin asparagus spears, ends trimmed
4 tablespoon butter
1 lemon, zest

Steam the asparagus until it just becomes tender. While it's cooking, cut the butter into chunks and place in a small pan with the lemon zest. Heat over a low flame until the butter has melted.

Serve the asparagus with the lemon zest butter poured over the top. Try this recipe with pine nuts.

Green Beans or Asparagus Wrapped in Carrot Rings

1 large fat carrot, peeled (the largest carrot you can find)
Small fresh green beans or pencil size fresh asparagus
Coarse kosher salt and pepper
Butter

Cut four (4) notches around the carrot lengthwise with a sharp knife so that it looks notched; then slice crosswise into about 1/2-inch rounds. Ream out the center of each carrot round, being careful not to break the ring.

If using green beans, snip the stem end off each bean. If using pencil sized asparagus, use the tips only, and cut them approximately 4 inches long.

Put the beans (or asparagus) inside the carrot ring (usually 2 to 4 beans or asparagus will fit into a carrot ring). Steam them until tender crisp; toss gently being careful not to break the carrot ring, with salt, pepper, butter and serve.

Get a pan real nice and hot. Keep the heat on high. Throw the asparagus in let it sit in there for a long time. After its burnt throw it in the garbage and then cook a different vegetable that tastes good. :)

dip them in a egg wash, then bread with breadcrumb/parmesancheese/salt/pepper mixture, and fry in a shallow layer of oil in a pan. (Called asparagus fries) make some sort of a veggie dip for dipping, mmmm mmmm good. Oh yeah, once breaded refrigerate for an hour on a cookie sheet before frying, sets the coating.

asparagus wrapped in puff pastry:

blanch the asparagus

prep puff pastry according to package directions - layer if directions say to...

cut to size so that asparagus sticks out of top and bottom when wrapped...

lay each piece of pastry flat, and brush on some botter and sprinkle with some cheese (any type - not too much)

lay asparagus on the pastry and wrap

bake according to package directions (usually about ten minutes)

how about...cut up the asparagus into 1 inch pieces or how ever big u like em a little bit of butter and salt in a frying pan cook till you like then mix in 3 eggs depending on how much u use...scramble it together and cook...thats how we always cook ours and turns out great

"Asparagus with Cream Sauce" - 8 to 10 servings

2 cups water
2 lbs. fresh asparagus; trimmed
1/2 cup chopped onion
2 tbsp. butter
2 tbsp. all-purpose flour
1 tsp. garlic powder
1 tsp. lemon-pepper seasoning
1/2 tsp. salt
1 cup chicken broth
1/4 cup minced fresh parsley
2 tbsp. cider vinegar
1 tsp. dill weed
1 cup (8 oz.) sour cream

In large skillet, bring water to boil. Add asparagus; cover and boil 3 minutes.
Meanwhile, in a small skillet, saute onion in butter until tender. Stir in flour, garlic powder, lemon-pepper seasoning and salt until blended; gradually stir in broth. Add parsley, vinegar and dill.
Bring to boil; cook and stir 2 minutes or until thickened. Reduce heat to low; whisk in sour cream. Drain asparagus; arrange on serving platter. Top with cream sauce.

I steam it until crisp-tender, and whip up a quick hollandaise sauce. Lemon goes so well with asparagus. Or any other green veggie like green beans or broccoli.

lightly grill or saute in oil to al dente. Then wrap prociutto around it and broil until a little crispy. Sweet honey mustard is great for dipping.
