I have never eaten or made buttercup squash before. I'm thinking of baking it and adding honey, ginger etc. Is it eaten with the skin or without? What are the nutritional benefits of this squash? Any good recipes? Thank you

That would be fine. I always use a bunch of butter....mmmm....butter, but sometimes I add brown sugar or I add garlic. It always needs a little salt too. I leave it in the skin to cook and serve, but you don't eat it. Bake 375 until tender. Squash has tons of vitamin A amongst other things...VERY HEALTHY!

I suppose you mean butternut squash. I like it thus: wash the squash. cut it in half legnthwise. scoopt out the seeds, tec. put them in a baking dish or on a cookie sheet face up. add 1 T butter and 1 T brown sugar to each half. Bake in a 350 degree oven for about an hour. No, don't eat the skins - just the yellow inside. good source of Vitamin C.

The recipes for the baked squash are fine, I like it with brown sugar and cinnamon, but garlic is also very good. Also have some water in a metal pie pan in the oven so the squash doesn't dry out.

Cut it in half the long way, scoop out the seeds, and put some butter and brown sugar in the scooped out seed hole, bake until soft. It's baked with the skin on, but the skin is not eaten.
