Roast Turkey Sandwich with Cranberry Pecan Mayonnaise

1/2 cup mayonnaise
1 tablespoon Dijon-style mustard
1 tablespoon honey
3/4 cup whole berry cranberry sauce
2 tablespoons toasted pecans, crushed or ground (see note)
Salt and pepper to taste
Thinly sliced pan roasted turkey breast
Bread (Sour dough, whole-wheat, or Kaiser Roll)
Alfalfa sprouts

Combine mayonnaise, mustard, honey, cranberries, and pecans in bowl. Whisk to blend. Season with salt and pepper to taste. Spread cranberry mayonnaise on one side of two slices of bread. Place turkey on one slice of bread. Top with alfalfa sprouts and second slice of bread.

Note: To toast pecans, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until golden brown. Or, toast in microwave: Spread 1 cup nuts on paper plate. Cook on high 2 1/2 to 4 minutes, or until heated through, stirring every 2 minutes.

I had this mediterranean one once that was out of this world. It had grilled chicken, romaine lettuce, feta cheese, kalamata olives, roasted red peppers, artichokes, and a greek dressing. YUM! (It came with tomatoes and onion, but I picked those off.)
