Let the caramels sit in the fridge until good and cold, then slowly peel the paper and it should come right off.

I JUST had the same situation and what worked like a charm was to take a clean washcloth, wet it, squeeze out the excess water, and microwave it for 30 seconds. Place the warm washcloth onto the wax paper and it will peel right off. Keep re-heating the washcloth in 15 second increments until all of the wax paper has been removed.

I did the exact same thing and I was so bummed because for a moment there it looked like I'd have to toss the whole batch. BUT my awesome husband took a blow torch (yes an actual blow torch!) to it and the paper peeled right off! I'm not kidding. The paper separated from the caramel and it was so easy to peel off but you have to move fast before it seizes up again. Next time... I'll definitely use parchment paper!

I had the same problem with peanut brittle. I think I've figured out that I used the wrong side of the wax paper. perhaps since it's carmel you could heat it up and then let the melted caramel run off onto a new piece of wax paper. then let it sit and remove it as directed

A combination of getting the candy cold enough and the wash cloth worked! Wow, was I glad. I was ready to throw the whole thing out, but instead I've got some pretty darn good nut toffee with chocolate on. When it was cold enough, I could flip it over and the chocolate didn't get smushed or come off at all.

I did the same thing, and after putting it in the freezer for a few mins, I took a clean paper towel or kitchen washcloth and wet it, then slowly worked the wax paper off in little rolls.
Good luck!
