SHRIMP TOAST CANAPES

1 lb. raw shrimp, peeled and deveined
1 green onion, minced
1/2 tsp. salt
1/4 tsp. garlic powder
A few dashes hot sauce
1 1/2 tsp. lemon juice
1 egg white
12 thin slices white sandwich bread, crusts removed
2 tbsp. butter, melted

Shell and devein the raw shrimp. Chop shrimp and combine with minced onion. Put into a bowl and add the salt, garlic powder, hot sauce and lemon juice. Mix until well blended. Add unbeaten egg white, mixing it in well.

Put bread slices under the broiler (or in a toaster oven) until toasted on one side. Turn over and spread untoasted side with the shrimp mixture.

Just before serving, brush the top of each slice (on top of the shrimp mixture) with butter and broil for four minutes until shrimp topping turns pink. Cut into quarters or triangles to serve. Makes 4 dozen canapes.

This is very very easy- and quite elegant. It's pretty lowcal, lowfat too.

Portobello Mushroom Phyllo Packets
1 medium tomato, diced
1-ounce feta cheese, crumbled (approximately 2 tablespoons)
2 tablespoons fresh oregano leaves, chopped
1/4 cup hearts of palm, packed in water, drained and diced (about 1/4 of a 14-ounce can)
1 large portobello mushroom, diced
8 sheets phyllo dough
2 tablespoons tomato paste
1 spray canola oil cooking spray

Preheat oven to 400 degrees F.
In a large bowl, toss tomato, feta, oregano, hearts of palm, and portobello until well combined.

Lay 1 sheet of phyllo dough on a clean work surface and brush lightly with tomato paste. Top with another sheet of the phyllo dough. Take 1/4 of the mushroom mixture and place it on the phyllo dough, about 1-inch from 1 end, leaving a border at the bottom and top. Fold the bottom of the sheet to cover the filling, then fold the top of the sheet so that it covers the filling. Now roll the unfolded end over the filling so that a packet is formed around the filling and there are not open sides. Set on a wire rack placed on top of a cookie sheet. Repeat process 3 more times. After you have finished the 4 packets, lightly spray once with the canola oil cooking spray. Bake for 15 minutes or until golden brown. Serve warm.

Each packet is less than 200 calories...

Spread low or non-fat cream cheese on fajita bread. Roll up as tightly as possible then cut into 1 to 2 inch pieces. Serve with fresh salsa.

This is my favorite recipe, and it is easy and low fat.


Taco Dip

1 bag of low fat taco cheese(shredded)
A package of low fat cream cheese
a can of premade chili (with or without beans)

and of course corn chips.

You spread the cream cheese on a bottom of a glass dish, covering all of the bottom. pour the can of chili over the cream cheese and spread around and cover with the shredded cheese. heat up in the microwave for about 4 minutes, until the cheese on top is melted. cover with plastic wrap cause it will splattler.


its so good, people beg me to bring this easy dish all the time. i prefer using hormel chili, its the best.

ok maybe by adding the chili its not totally low fat, but they might have a can of it reduced.
