I wanted to make the dough for sugar cookies and gingerbread cookies today and Bake them on saturday or sunday. Will it last that long? (i don't want to freeze it)

I made sugar cookie dough one night this week and baked the cookies the next night. They came out fine. Just wrap the dough well with plastic wrap. It'll be fine to use on the weekend. When you're ready to use the dough, remember to let it warm up just a little (about 15 minutes depending on how much dough you have). I like making cookies like this because the dough doesn't stick as much so I don't use as much flour.

I've had some cookie dough for up to 5 days without any problems in the fridge. Well wrapped should not be a problem from today until Saturday or Sunday***

Freezing is best. Even better than freshly made. It stabilizes the cookie mixture. Tried both ways. Its always best to bake cookies from cold. freshly thawed or fresh from refrigertaor.

2 days tops with out freezing.

Wrap in damp cloth and then airtight container, should last for a couple of days.
