Blackberry Cobbler (or any fruit really!)
1 T. butter
1/3 c. sugar
1/2 c. milk
1 tsp. vanilla
2 tsp. baking powder
1 c. flour

2 - 3 cups fresh or frozen balckberries
3/4 c. sugar
1 to 2 T. corn starch

Spread fruit mixed with 3/4 c. sugar and cornstarch in an 8x8 inch baking dish. Melt butter, add 1/3 c. sugar, milk, and vanilla. Add flour and baking powder. Mix well and drop batter over fruit with spoon. Sprinkle additional sugar on top of batter. Bake 30 minutes at 350. Serve warm with vanilla ice cream!

blackberry cobbler!!!!


Ingredients:
2 cups self rising flour
2 cups sugar
1 lg. can evaporated milk
1/2 cup butter or margarine
1 package (unsweetened) frozen blackberries


Directions:

Mix flour and sugar well. Meanwhile, melt butter in a casserole dish (2 quarts) at 350 degrees. Pour milk into flour mixture and stir well. Add the milk mixture to hot butter in pan. Add frozen fruit and top with 1/4 cup sugar. Bake at 350 degrees for 45 minutes or until brown and center is cooked.

1 1/2 lb blackberries
1/2 cup sugar
1 T tapioca
1/2 cup water (if using canned blackberries, omit water)
1 T butter

Cook on medium heat until slightly thickened and bubbly (about 5 minutes). Stir in butter.

Biscuit topping:

1 cup flour
2 T sugar
1 1/2 t baking powder
1/4 t salt
1/4 cup butter
1/4 cup milk
1 slightly beaten egg

Sift dry ingredients together. Cut in butter until it resembles coarse crumbs. Lightly beat egg and milk. Add to dry ingredients. Stir until moistened.

Pour filling into shallow baking dish. Spoon on topping in six mounds. Bake at 400 degrees for 20 to 25 minutes. Serve warm.

West Virginia blackberry cobbler
2 cups fresh blackberries
2 cups sugar
2 cups white milk
2 cups self risen flour
2 teaspoons vanilla
2 sticks real butter

preheat oven to 350 place 2 sticks of butter in a large cake pan and place in oven until butter is melted. In a large bowl mix by spoon flour, milk, sugar, and vanilla. pour this mixture over top the melted butter in cake pan DO NOT STIR. Then take clean blackberries with a little juice (you may sweeten them to taste with sugar) and dump evenly over top the batter mixture. DO NOT STIR into the mixture. Place in oven and bake 45 mins to 1 hour until golden brown. Serve with vanilla ice cream.
