in my family we like to do a "theme" for x-mas dinner .. one year we'll have everyone bring a mexican dish .. or an italian dish .. or a picnic-type dish .. etc. it is really fun cuz everyone gets a chance to maybe try new recipes or bring their faves!
good luck

Roast leg of lamb is very good. Simply cut a few small slits on different parts of the roast and insert a clove of garlic. Place bacon over the top and roast starting at 400 degrees farenheit for 15 minutes then at 300 degrees farenheit at ten minutes per pound. My mother and I love this for New Year's day but there's no reason it couldn't be served at Christmas.

We're having Steamed King Crab Legs with drawn butter, Sweet and Sour Baby Carrots and oven roasted corn off the cob.......can't get more untraditional than that........We're in Southern California on the beach, so King Crab is always on sale this time of year, due to the seasonal catch in Alaska.......and everybody LOVES King Crab legs dipped in melted butter..........Oh, and the side dishes can be made up to 3 days before, and the crab only takes 8-10 minutes to steam....what could be easier??? Enjoy the holidays!!!

Chicken Enchiladas Suiza

12 corn tortillas
2 cups shredded chicken
6 oz. chopped, roasted and skinned green chiles (fresh is best, but you can use canned in a pinch)
3 cups fresh spinach
1/2 cup chopped onion
1 cup crema or sour cream
4 oz. cotija, crumbled
5 oz. evaporated milk
15 oz green chile sauce
Warm oil to dip tortillas in
PREPARATION:
Heat oven to 350 degrees.
Heat 1 tablespoon oil in a pan over medium heat and cook the onions for about 1 minute. Add the spinach and cook it for about 5 minutes until leaves are wilted. Fold in the chicken and green chiles. Set Aside.
In a saucepan, heat creama, evaporated milk, cotija and chile sauce over low heat until sauce is smooth.

Prepare a 9x13 inch baking dish by coating the bottom with a thin layer of sauce. Dip a tortilla into the warm oil to soften it and place it into the pan. Place about 1/4 cup filling down the center of the the tortilla and sprinkle with a tablespoon of Asadero or Queso Quesadilla cheese. Roll the tortilla up and place seam side down in dish. Repeat until all tortillas are used.

Pour remaining sauce over the top, and sprinkle with the crumbled cotija. Bake dish for 15 minutes to melt the cheese.

A couple of years ago I convinced my grandmother to stop making ham for Christmas. I love her chicken and dumplings and my cousin loves her lasagna. So, she started cooking both (we have a lot of people eating). It has worked out for everybody ever since.
