popcorn, in kernal form, is white and starchy with a center of water. When the water in the center heats up to its boiling point and turns to steam, the increase in pressure explodes violently and literally turns the kernal inside out. the starch that was packed in the inside expands and turns out to the outside. so thats why each popcorn kernal is unique; they are a product of a smal explosion
