There is a small air pocket in the large end of the egg. When the egg is fresh, the pocket is only about 1/8th of an inch deep and as large around as a dime. As the egg ages, however, it loses both moisture and carbon dioxide — shrinking — so that the size of the air space increases. And the size of the air space determines the buoyancy of the egg.

So if you submerge a very fresh egg in water, it will lie on the bottom. An egg that is a week or so old will lie on the bottom but bob slightly. An egg that is three weeks or so old will balance on its small end, with the large end reaching for the sky. And a bad egg will float.

2 to 3 weeks past the expiration date.

The egg will continue to be fresh for at least another 2-3 weeks if it has been refrigerated from the time packed until used at 45 degrees F. or lower. (from link below)

I personally think they can be kept longer... I have and used them with no problems at all.

If they were bad, you'll know when you crack them.... ewww stinky, but that's never happened to me. They keep well especially when stored properly


ps... the only way an egg would have salmonella is if it started out with salmonella on it... it wouldn't have mattered if it was "fresh" or after the expiration date.

Also, the float test doesn't tell you if it's rotten... I just tells you the egg is older. All eggs have an airsac at one end, the older the egg the larger the airsac, hence the higher tendency to float.

If the eggs are good, can store about 3 weeks in fridge. To tell if the eggs are spoiled, shake them slowly. If you feel movement of yolk inside, means its no good. But becareful, if you shake to fast, you might cause it to be rotten. Also dont do the egg float or sink experiment cos if you wash an egg with water, you cant keep it too long. If you want to clean it b4 storing, then, wipe it with damp cloth.

I would not use an egg that is more than 2 weeks old- and the older they are, when you crack it- they pour out slower and the yolk looks more gelatinous instead of runny-----their cheap the motto in the food department is "when in doubt---throw it out" it really keeps you healthy to abide by that rule, and the fact that you're acting is scary- eggs carry salmonella---a brutal flu like illness.

They'll keep a month, maybe more. To tell if they're spoiled, crack one in a separate dish (separate from whatever you're using them for) and smell. If it's rotten, you'll know.

the side of the carton has an expiry date, but if not I usually dont keep them longer than 4-5 weeks at most

I've no idea, but if you get a bowl of water and put an egg in it, if it floats it's bad and if it sinks it's good. I think anyway...

30 days after the expire date. Then toss them.
