Ich - eech
Du - doo
Sie - zee
Sein - zine
Deine - dine
Mein - mine
Ihr - ear
Bitte - bit-tuh
der - same as English
die - dee
das - daas
dem - same as English
des - same as English
auf - owf
er - somewhat like English
euer - oy-er
that B-like letter you're talking about is scharfes s, which is written for the double ss (example: beißen, German for 'bite', pronounced "bye-ssen" with a strong s)

ich is like ick but not with such a hard ck. it's softer. but, it's not like the ch in choose and it's not pronounced like an sh.

du- doo
sie- zee
sein- zine (long i sound)
dein- rhymes with the last word (dine)
mein- like mine
Ihr- like the word ear
bitte- bit-tah
der- like the word dare
die- dee
das- like dahs.
dem- like dame
des- short "e" (dess)
auf- like the word out but with an f on the end instead of a t
er- like air
euer- oy-air

the letter your talking about is an ess-tset (that's how it's pronounced) i don't know how to type that letter but you can use a double s in its place. some germans do that instead of using that letter.

you know, the ß is not used very often anymore since we've got the "neue Rechtschreibung"(new spelling). The ß (sz, that's how we call it) is used after a long vowel (like in Straße-street) or after two vowels (like in außer-except) but after a short vowel you use ss (like in Masse-mass). The other questions have already been answered.
