Shouldn't use a knife as this will scratch the surface making it more difficult to remove any future cheesecakes.
Generally, an offset spatula (no sharp edges, flat surface) is used to remove slices as they are served. This maximize the amount of the cake removed intact -- with the bottom also.
Actually, with a spring pan, it would be easier to remove the spring-ed portion of the pan, then run the offset between the cake and the bottom of the pan. Place on a serving tray and serve from there.
To clean, soak the pan bottom. I usually use a cheap wide plastic putty knife to take off the residue before soaking.
Alternatively, prior to placing batter into baking pan, you can cut a piece of wax paper or parchment paper (cutting to dimension) to place at the bottom of the pan. This will ease cleaning greatly.

If you are asking how to lift the actual cheesecake for serving try using unflavored and unwaxed dental floss. Pull a long string of it out and slide it under the crust to seperate from the pan bottom.
If you are asking how to clean the cheesecake from the bottom of the pan try soaking it in the sink with dishwasher detergent. It cleans anything baked and caked on.

cut parchment paper but cut a point on each side of paper...enough to pull with fingers when cooked and ready to remove from pan. Then just take hold of the points and pull. You will still have parchment under cake, but no problem when cutting cake.

I usually put an aluminium foil in the pan whenever I bake coz the cakes,pies,cookies or whatever comes off easily.

Put some water and detergent in the pan and live it there for sometime and then use a scoth brite and it will come off easily.

Yes, go to the kitchen supply store and get a large "off set". This will slide underneath the cake and allow you to safely move it.

next time put a piece of baking paper or parchment paper under the gram crust. cut the paper to size and then put your gram crumbs down and when you cut it will release easily.
