i work in a private country club and have full use of whatever i want to buy and equipment i want to use, so this isn't exactly an at-home recipe, but heres what I'm having.

yesterday i smoked 5 lbs. of tenderloin tips (filet mignon scraps)
and caramelized two large yellow onions julienned.
I'm going to lay out crescent roll dough onto a square sheet tray
and pre-bake.
when ready to serve i will saute' the thin sliced tenderloin, onions, and some type of mushroom until mushrooms are tender and beef is hot
lay this mixture out on the crescent crust
top with shaved Gorgonzola( or any cheese of your liking)
and bake in oven until cheese melts

my family doesn't do a sit down type dinner for Christmas. its more like a party with appetizers and a spiral ham

the beef dish is definitely different

u dont have to have all that to make xmas special for you...okay i'll give u a lil nigerian recipe if u follow it well it'll turn out nice for you
u'll need;
tinned tomatoes
diced beef or corned beef
pepper
salt
green peas(optional)
onions
vegetable oil
curry
nutmeg
thyme(optional)

oaky..u boil the meat(of course with spices),then you heat the vegetable and when its very hoy you put in the tinned tomatoes which you should have diluted a little with water,you allow it fry for about 20 minutes...then,tou add the meat and the stock of the meat as well,you add other ingrediants your taste...tou could replace the diced meat with chicken or fish...as u wanna

you could eat it with rice,yam,plantain etc

Well I'm in Thailand and going for a buffet meal Xmas eve, there will be everything from sushi to salad! Personally I'm looking forward to the turkey!

Okay, I know this a little crazy, but then again so am I. How about breakfast for dinner. It could be sort of a brunch thing and you can even serve ham. I am sure your guests will always remember it!

Pizza,we got it during the week and it is "fermenting" under one of our beds.We will dust off the mould and eat it xmas day with a few cans of alcohol free beer and finish off the chocs my folks sent me.It might sound crap to you but when you are shivering in the cold and rain.....we wont be

try a bird stuffed in a bird, stuffed in a bird, suffed in a bird...etc. i think it's called a royal roast but not sure.

start small (wood pidgoen) and use bigger and bigger birds (partridge - pheasant - duck - goose), ending with a turkey. all need to be de-boned so quite a lot of work.

or buy one...

Spaghetti and Meat Balls with a salad and garlic bread....It's my husbands favorite meal. We had enough Turkey and Ham to last us awhile, so we decided to eat something different.
