I'm in the same position. I take a lunch to my work every day and it can get pretty boring. The microwave helps a lot here. I hope you have one available. I make lasagna or tuna casserole and put the serving size I want in a plastic container and reheat it when I'm ready to eat.
For something in the fruits and vegetables category, I like to pack some canned peaches and some cottage cheese. I mix them together when I'm ready to eat them. If you like carrots and/or celery, you can include them in your meal plan.

Ok so dont eat it with lettuce, eat on a bun.
San Antonio Chicken Salad
Makes 4 servings
Ingredients:
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled
Preparation:
Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

This is what I usually make for myself and kids whenever my husband is not back for lunch or dinner. Hope you like it.
Fried sausages kebabs:
1. Cut off the crust of 2 slices of bread
2. Roll on the bread to make it thin.
3. Roll it over the sausage, wraping it.
4. Use some water to make it stick at the end.
5. Fry it. Let it cool. Cut into small rounds.
6. Prick one sausage part into a stick, followed by tomatoes, folded salads, then sausage and continue.
7. Put some mustard, chilli sauce and mayo on the kebab and enjoy!

I love having soup at this time of year. I make a huge pot and then freeze it into individual portions. You can easily press the frozen soup out of the container into a pot. Heat it for five to ten minutes and voila. I like to have a bit of hummus and baked pita chips with it. Some of my favorite soups are chicken ric, tomato basil, vegetable and split pea. A change from the normal sandwich...try it in a pita, wrap, or even some chunky multigrain bread. For lunch I also like yogurt parfaits. I mix one container of ff vanilla yogurt, 1/4 cup of grape nuts for crunch, berries, bananas or any fruit that I have on hand. It is yummy and especially filling. Sometimes at dinner time (because I have more time) I make larger portions. I then have leftovers for lunch. You can also freeze dinner portions kind of like a frozen meal and reheat in the microwave. Last idea...I like couscous mixed with broccoli, carrots, peas, really any veggies with a bit of olive oil and some salt and garlic.

French Dip Sandwich
1 pkg of Aujus -
2 cups of Water -
Begin to heat,
Add 1LB Deli roast beef to pan. Heat.
Requirements
1 Package Hoagie Buns
1 lb Deli slice beef
1/2 LB provolone
1 pkg of aujus mix
2 cups of H20
When you've slice the hoagie buns, place a portion of the beef in each hoagie. lay provolone over top of beef. microwave for 30 seconds to melt cheese.
pour contents of aujus mix into cups.
Add chips or french fries as desired as a side.

How about a casserole?
Start with a pound of ground beef. Cook in a skillet, chopping up the beef with a spatula as you cook. Drain fat. Next, mix in a tablespoon of chili sauce and a small can of tomato paste. Layer the bottom of the casserole dish with this. Boil a couple of cups of macaroni and set aside. Preheat oven to 350 F. Open a can of peas, drain, and put a layer over the beef. Drain macaroni, and layer on top of the peas. Grate some cheddar cheese on top of the macaroni. Bake until cheese is melted and bubbly.

Quesadillas or Tostadas: Cover a flour tortilla with cheese, green chili if you'd like, cooked chicken or beef, salt and pepper. Top with another flour tortilla. Spray cooking spray on skillet, put tortillas in and spray top w/ cooking spray. Brown on one side, flip and brown on other side.
Or: toast corn tortillas in broiler until crispy. Cover with cheese, beans, green chilies, cooked ground beef or chicken (whatever you have or are in the mood for), salt and pepper and put back under the broiler until the cheese melts.

Marinate fish slices in sake (Japanese rice wine) and soy sauce. Shallow fry cooking it on both sides. It won't take more than 5 minutes to cook. :-) Have it with sticky Japanese rice or Thai Jasmine rice (cooked in a rice cooker or directly over a hob/range).
