You don't say how long you want to take to get to your destination but for a long weekend, you're limited to Europe (or maybe New York).
Take a look at http://www.visitbritain.co.uk/ to see if there are any places in the UK that take your fancy. Maybe the Lonely Planet http://www.lonelyplanet.com/ Blue Lists can give you some ideas for Europe. Alternatively, visit your travel agent and see what last minute deals they have within your budget - I tend to use to The Flight Centre.

I would be checking out Key West. I have traveled pretty extensively and Key West is the one place that my hubby and I always go back to. Plus, for a long weekend it would be easy to get to and it is pretty affordable.

How about going skiing?
Short ski breaks are quite popular now and the snow should be good all over Europe in February.
