Stay in Jersey City. We stayed in the Ramada for half the cost of staying in New York and it only takes 15 minutes to get into New York by train.

Stay in East Rutherford, NJ - right near the Meadowlands. There are quite a few hotels on Paterson Plank Road, and you can get a 20 minute bus ride to/from the city.

Staying with friends or renting a room in someone's apartment would be most economical.
As far as eating and sight-seeing, take the city bus instead of Gray Line tours; see if there is free or low-cost admission to places; eat at take-out places or get your food at grocery stores; do lots of walking; never take a cab.

I agree with 42 -- a good site to find this information would be newyork.craigslist.org, in the sublet/temporary link. You could also try the rooms/shares link on the same site. Good luck!
