Yes! It has changed dramatically. And not for the best in a whole. I used to love watching that channel. Iron Chef was great! Now I can't come to watch it anymore. I recently seen they have a show now called Iron Chef America!?
They used to have a show that would have appealed to you, it dealt in ethnic foods. I do not know if it is on anymore, nor do I remember the name. But he went around different places like vietnam, philippines, etc etc. countries like those and show how they cook and prepare meals. Primitive ways and gourmet ways. I highly doubt the show is on anymore, it had interesting and unique ways of cooking and food. And the host did not yell out "bam" or "this is so delish" every time the food was garnished or spiced up.
I have found that the Travel Channel plays a lot of the ethnic asian food shows more than Food Channel. You will just have to catch them at the right time. How that channel has fallen to mainstream media to appeal to everyone for more ratings and popularity. The end came when Emeril had a tv show and began commericals. That put Food Channel on the map big time and more and more began watching and they tried to appeal all, losing the original fanbase that found it interesting for the cooking and not so much catch phrases and one liners. Look around the Travel Channel sometime and see if you can catch the asian travel guide shows. That would be your best bet if you want less of and little bit more of.
But I am with you on how that channel has changed. Sad.

I agree with everything except #6 & #9. I think it's not a bad idea to show where commercial food comes from but why don't they ever show real farms or ranches? T. Bordain I put in the same category as Emeril, Mario and Flay, just another over-ego'd chef! I'd also nuke that fat cop that can't cook but goes around advertising restaurants! Just what I want to see-eat here and you can look like me. What ever happened to the guy that won their new show cook off? The spiky bleach blond guy...I liked the black guy better (but I guess he wasn't as demographically sound) point #4 applies here!.
As a veghead I really want to know where the heck the *real* veggie shows are!!! We're 4-5% of the US population and the last real veggie cooking show I can recall seeing was on PBS "Cooking with Kurma" about 10-15 years ago. Considering the fragmentation of TV audience I'd think they'd get good ratings (up until the stooge they hire does fish as vegetarian).

I pretty much agree with all that you said. I get tired of all the re-runs, too. Sometimes I start to watch something, then realize I've already seen it. That's probably the nature of anything that gets re-runs.
I am glad they put Nigela Lawson on. I'm not tired of her yet. You left one of the worst offenders off the list - that being Sandra Lee. Her shows are unbearable even the first time around. Too much "cute" and nothing helpful in the "food department."
I actually enjoy Iron Chef America. I would like to try it at home with my friends. I think a person would only need about $50,000 of equipment and $75,000 worth of ingredients on hand to make it work. I have to wonder, though, if the secret ingredient is really secret. Alton Brown is probably why the show works.
Also, I still like Mario Batali.
Very of the FN chefs put out cookbooks that I've found valuable. Ina Garten and Mario Batali both have made worthy efforts.

I agree! I think rachel is the best looking cook I have ever seen, but I have seen her too much, I dont even like triscuits anymore. The budget show is way better than her 30 minute meal show. Have Emeril in live shows only, its what makes him good to the TV audience. Alton Brown and Bobby Flay rule so does Paula casue its always relaxing to watch her. They should go back to the cooking festivals, all types of food, not just ribs and cornbeef brisquet. Hey Im a boy who met Grill ! Long live wood charcoal !!!

I agree on the Network itself. Almost all the shows are lame boring and the same. As for Rachel, you cant stop someone that looks that good and can cook simple inexpensive and quick meals for families today. She does have a lot of shows but some are well worth the time. and her husband must be a moron, shes a keeper. anyway if anyone has the money, i can supply the chef the facillity, the knowledge, experiences, guest speakers and even a culinary school in the same building to go along with it.

Ive hated Emeril from the start. Enough already!
You didn't mention Giada DeLurentis. If she grins in my direction one more time I'll shriek! And I don't CARE about her family Italian meals anymore.
Getting sick of Barefoot Contessa and her elegant lunchtime get-togethers with every gay man on the Hamptons!
The worst is that awful (!) Semi-Homemade lush (Sandra Lee) and her stupid table-scapes and kitchen to matchy matchy everything...
I love watching Alton Brown, but if it gets around they'll shove him down our throats too....
Bobby Flay, get over yourself
Paula Deen, stick to what you do well - dont be pressured to do too much or we'll tire of you too!
More Asian (where is Ming Tsai?), more ethnic cuisiine. Some soul food, some Tex-Mex, some variation!

Sick of Rachel Ray...sweet girl...but enough already.
Love Alton, he's quirky, informative, and most of his recipes have come out well for me.
I'd like to see that Brit Chef, Ainsley? I can't remember his name... had a game show, cooking show (BBC).
I couldn't care less about Unwrapped as well.
Go Tony, but I am NOT eating worms in Bora Bora.

That's the way almost all tv programming has become. It's how they, the tv programming gate keepers, decide what's "HOT" and what's not. Once they see something do ok, the tv exec's sell the farm and try to duplicate that success by copying themselves over and over again. It's formulaic and the same thing has happened to popular music.
