There's a rule: 3 weeks without food, 3 days without water, 3 minutes without oxygen. Pass these limits, you'll probably drop dead. Obviously that'll vary a bit, person to person, but going without water for two days is just idiotic. You'll feel like crap, your body will start doing horrible things to itself (quite possibly irreversible damage), and all you will have proved is that your IQ is well below average.
To answer your question, no, it is not okay.

The only thing I would be concerned about is water, Im not sure if it would be a very good idea to stay dehidrated for that long, about food I would reocmmend you that before the challenge you start reducing the intake of food so that the days you dont eat your body would be a more used to a low intake of food. Then after the challenge is over start increasing the intake again. But try to find out about the possible risks of not drinking water for two days.

Go two days without water and you could push your body to critical limits of dehydration.

I would modify the challenge rules to include at least three glasses of water each day of the challenge and forfeit something else...like stay blindfolded.
