Bit 70's i know,
I will be cooking meat in it, just not sure which oil is best.

Fill 2/3 of fondue pot with Peanut Oil (or Grape seed Oil or Clarified Butter)
Heat oil to 325-350 degrees

We cook everything a head of time then use the fondue pot for dips.
We take 2 cans of cheddar cheese soup, wostershire sauce and some white wine.. and let it bubble in the fondue pot. Just set out the veggies, like celery, shrooms, french bread, little hot dogs, pre cooked meat balls.

Why don't you try a healthier broth version:

1 bottle of red wine
1 package of onion soup mix
1 litre of Campbell's beef low sodium broth

It will cook the meat just as well with great flavour!

Peanut oil is the only way to go. It can get a lot hotter without burning and smoking.
