I wish mine would instead of in the grass - It's a lot easier to pick up if it's on pavement!

When your dog does this say "nooooooo" in a deep voice. (if you want to communicate in dog lingo growl as well, this is how a mother dog teaches her pups). When the dog does his "business" in the alloted place that YOU give him praise him in a higher pitched, happy voice.
