I'm with Dave... nostalgia time... my mother used to make all those shapes and then put sweet icing on them that hardened quickly so if you wanted to put sprinkles as well, you had to do it fast! The cookie wasn't that sweet... but the icing balanced it nicely. These generally got pulled out when we had company because they took so long to make.
She had a list of cookies she made each year:
The sugar cookies.... snowballs... chocolate crinkles... snickerdoodles... spritz (some green, some plain, some with candied cherries, some with sprinkles)... oatmeal chocolate chip... and then every year she tried a new recipe.
The year she tried liebkuchen (probably spelled it wrong) which was some German cookie with molasses in it, the whole family had to take turns stirring the dough because it was SO stiff and we decided later, as we munched and rubbed our sore muscles, that the cookies were good... but something easier would be the plan for next year - lol
Ah.... so my favorite Christmas cookie? My mother's :)

They are called snowballs, or Russian tea biscuits. Little shortbread cookies with pecans, rolled into a ball baked and then rolled in powder sugar. The best, with the best Christmas memories. Have a blessed Christmas and a joyous New Year! God bless****

A favorite of mine to eat and bake! Peanut butter cookie dough, which can be bought premade. Roll a bit in your hands, roll in regular sugar then bake. While still hot put a Hersheys Kiss right in the middle. It takes a long time for them to set up. Everyone, who doesn't have a peanut allergy, loves these, and they are so easy to make.

pinwheels. mom always made these along with sugar cookies, gingerbread, peanut butter and chocolate chip. then we always had some popcorn balls. like everyone else Christmas is a time for memories of the times we had. in a sense it is a shame these days are gone never to return isn't it

My grandmothers recipe for Molasses Finger cookies. It has walnuts, raisins and drizzles with icing.
A very close second is the sugar cookies with powder sugar frosting. I made these every year as a girl.
With a cold glass of milk, of course!
