depends on the doll
if its made of wax and has bits of human hair on it, then its a witch doctor.
if its made of latex and blown up, then its a pervert.
If its called barbie, then they are sad.. but joking aside I don't think that they have a collective or academic term, like say a bibliologist, a book collector, as the collecting of dolls is a relatively modern past time.
Its only collectors of historical items that have technical term's, and before the 1930's children's toys were basically hand made, and given to children, so not too many have survived. A plangonologist is someone who collects dolls .
As far as dolls are concerned most pre-1930 bisque, china, papier mâché, wood, and wax dolls are considered antique by collectors. The french have a term - BÃBà for small dolls of children, and call collectors the same name - BÃBÃs
