I don't reckon he'll be offended by a harmless greeting...
But as you obviously know that the guy is Jewish and does not celebrate Christmas, it would be even more kind of you to wish him a happy Hunukkah, or just happy holidays.

I think it is. Whenever the holidays are around I try to make of habit of saying "Merry Christmas, Happy Holidays". I figured that way no one will be offended or felt left out.
