Look at license plates and see how many different states and/or countries you see.
For quiet times, you could play "Good little Quaker" (no offense to any Quakers out there). Everyone must be very quiet. The last person to make any noise wins.
Try to spell your name using the signs you see along the road trip.
Each of you keep a journal of your trip. You can add stickers and picture as well. Then, if you like, share the journals with the other family members and see how differently each of you experience the trip.

well do you have a console? Nintendo, Nintendo DS ect.?
if not i like to sketch what i see out side! or listen to some music . Also i like to before hand make a Strong kite and tie string in to it and put it thru the window!

if you have ps2 with a screen u can have fun playing driving games on the road. lol it feels weird trying to drive on the game in a moving car haha
