Well you can pretty much go to any undergraduate school that offers pre-professional programs. Anesthesiology involves a lot of chemistry, to you may want to consider majoring in chemistry, or organic chemistry, or possibly even biochemistry (these are the track programs offered fo the pre-med program, along with biology). You don't have to major in the offered track programs, you can major in anything really, but I would suggest sticking with one of those.
Getting accepted into grad school for anything related to medicine requires a lot of extracurriculars. They aren't completely concerned with test scores (although they are important as well) but they are also looking to see that you can handle a job, volunteer work, schooling, and a social life all at the same time. Working in medicine is high stress, and this is how they can make sure you can handle it. It is also important to get involved in organizations (like school organizations or otherwise) because they want to see if you progress through your time spent in the organization to a position with more responsibility and leadership. All of this you want to start doing around your second semester of your freshman year of college. If you talk to a academic advisor when you get to college about pre med, they will also tell you that you will need letters of reccomendation and letters of evalutaion from teachers and professors. One more thing, you'll want to attend all of the seminars and stuff like that relating to medical professions and classes and grad school, etc.
I know it all seems like a lot, and there is still more to it. I'm doing it now, and it seemed like hell at first, but after you start getting everything in place, it's not that bad. So don't stress too much over it.
