i know i could always use a mule to try to show stubbornness, but i would be grateful if you could tell me anything else that you think represents the word. thanks in advance =)

Here are some ideas:
A goat refusing to let go of a tin can or an old tire that someone is trying to pull out of his mouth.
An ostrich with his head stuck in a hole (I know, it's not really what ostriches do, but it's a stereotype that works) and someone in front of the ostrich is trying to show it a book with the "facts."
Two kids fighting over the last cookie in the cookie jar.
Two groups of kids having a tug-of-war.
The Boston Tea Party was a classic example of American colonists utterly refusing to pay taxes on British tea, so they dumped the tea into the Boston Harbor on Dec. 16, 1773 (wikipedia article).
One of the funniest scenes I saw recently was a Little Rascals movie, where Spanky and Alfalfa (the two leading boys) were trying to get out of the truant officer's house before he punished them for pulling down a curtain rod and accidentally pushing him onto a prickly cactus that another boy had left there. Spanky and Alfalfa alternately pulled each other away from the front door over and over again in their hurry to be the first one to escape out the open door. If they hadn't have been so stubborn in trying to be the first one out, they would have got out even faster.
If you want to do something related to Christmas, you could have Santa's reindeer on strike holding up picket signs until they get a share of the Christmas cookies the kids leave out for Santa when he comes around.
Any pictures of Union strikes with men or women marching in a circle with picket signs would work, as well.
Two men arm wrestling is a sign of stubbornness, especially if they have been going for a while and are pretty red in the face. You've probably seen scenes like that before, where they keep going back and forth and no one wins for a long time.
