Well that is a very good question and one subject to debate. It depends mostly upon what you are looking for. Are you looking for an insane stunt fest? A mat based technical match? Or a high drama well plotted classic.
I will suggest three matches that I have enjoyed, but I will not say that they were the best ever, just ones I have enjoyed.
Spotfest: The first TLC (Tables, Ladders, and Chairs) match beween the Hardy's Edge and Christian and The Dudley boys. I can't remember the specific event but I think if you type TLC 1 you should be able to get it. This was an innovative match in which all the participants left everything hey had on the canvas.
Technical: The first match Beween HBK and Kurt Angle. I think it happened at Wrestle Mania 21, I might be wrong about the event, it was a 5 star match between two of the best the industry has ever had.
Classic: Benoit winning the Heavy Weight Campionship at Wrestle Mania Twenty, defeating HBK and HHH. This is one of my favourite matches of all time. It was a sound match from a technical point of view and it was awsome watching HHH do the job to Benoit and the when Eddie Gurerro came out and hugged Benoit and they both had tears in there eyes, just to see those two underdogs with there titles, was something special.

Ric Flair first NWA championship when he defeated Harley Race, legend of wrestling. I also enjoyed the Billy ' Superstar ' Graham defeating legend Bruno Sammitino. Tag Teams; Minnesota Recking Crew or Legend of Doom were both good. Scoot Steiner changed to Big Papa Pump he dominated the ring for a few years. Ken Pet era defined the muscle man thing. There are so many could go on.

No doubt The Wreslemania Match for WWE Cham title b/w Brock Lesner and Kurt Angle. Remember both broke their bones n Brock won with his broken neck.
