The kind of flower you are using is determined by the protein content. Cake flower, at the bottom of the scale has about 7.5 to 8.5 percent protein. Durum wheat, at the top of the scale, has 13 to 13.5 percent protein and is used to make pasta.

Bread flour has 11.5 to 12.5 percent protein and is what you will want to use to make your pizza dough. You could find bread flour at most supermarkets. It will be next to the all purpose flour and should say "bread flour" on the bag. Also, King Arthur brand unbleached all-purpose flour is 11.7 percent protein and would work as well.

Go Wall-Mart and buy 'White flour' or 'ALL purpose flour'!

Also buy a bread maker, it has the best recipes for all kind of breads and dough.

You are going to make the best bread and ALWAYS remembering me; as you are going to SAVE hundreds dollars on bread and TIME and always you have the healthiest fresh bread and dough in your kitchen!

It is fun, try it!
