There isn't anything you can load onto your notebook which doesn't require a massive investment in memory, Chinese Language skills, and time.
Altavista, and Google are on the net, and you would need wireless access, in addition to the ability to type in Chinese.
And, those translations are often really poor.
When you get to China, have your business associates or friends take you to an electronics store, and get a Casio or Seiko digital translator for English-Mandarin. They cost from US $100.00 to $1,000.00. The cheaper ones are great for beginners, and they contain dictionaries, small translators, pronunciation and help guides. They are the size of a blackberry and the batteries last months.
