They are small quahogs (Venus mercenaria), a hard-shell clam of the Atlantic coast. Littlenecks are often eaten raw. The next size up is cherrystone, about a half-grown quahog. These are sometimes eaten raw, more often cooked. The full-size quahog is generally eaten in ground-up form, as "stuffies" (baked quahog shells with a quahog-meat and breadcrumb stuffing) or as chowder.
