Very huge subject and can also get very involved, but I'll give you a run down of what I feed my rats.

First, no commercial diets are good for rats. Half the time there is stuff in there that the rats don't like and most of it is wasted. Rats don't like rabbit/alfalfa pellets. The dried corn has little nutritional value for rats.

Lab blocks are a better choice for rats.

Rats are omivores, so anything you eat, they can eat. We avoid, or give in moderation, sweets, spicy food, fat. But rats can eat chocolate.

Rats can also eat foods from the rodent, bird, cat, and dog sections of pet stores.

I make my own dry food mixes from grains and seeds. I make veg salads and fruit salads for my rats.

Vegetables? Anything, and I mean anything, that you find in the supermarket........fresh, frozen, or canned.

Fruits? Anything, and I mean anything, that you find in the supermarket........fresh, frozen, or canned.

Just try it, your rats might like it.
May rats are particularily fond of peas, avocado, banana, but they get a huge variety of foods.

OK, there are some exceptions:

You don't really need to add vitamins to your rats' diet but there are two formulas that are agreed upon on the rat-only forums. Pediatric (baby) vitamins, and a green food like Nu-greens, or Green Mush.

Rats are omnivores meaning they eat just about anything. Don't give iceberg lettuce as it can give them diarrhea. No dried fruit (too sugary). If your rat is getting a really good diet with a high-quality pellet food and a variety of fresh foods, it shouldn't need extra vitamins. Don't use vitamins that go in the water. The stuff may be sweetened with sugar and will grow bacteria which can make the rat sick.
