It seems to me they must know because they always have other food items that work perfectly with the secret ingredient on hand....they can't possibly have every food item imaginable in Kitchen Stadium.

At one point, they did a 'behind the scenes' of the Japanese version, and while they don't know the actual secret ingredient, they are given an idea of the type of food: poultry, beef, vegetable, fruit, etc.

The chefs do not know what the secret item is. Most of the time they use "standard" reciepes modified for the secret item. it all comes with being a top rated chef that you know what foods taste best with each other. The original Japanese version was the best version so far.

I have often thought the same thing, however it is called the SECRET ingredient so I must assume that they don't
