Nice trick! Here's the math behind it:

Let x be the number formed by the first 3 digits of your phone number, let y be the number formed by the last four digits of your phone number, and let n be the final answer. Then:

n = (250(80x + 1) + y + y - 250) / 2
n = (20000x + 250 + 2y - 250) / 2
n = 10000x + y.

Which gives you your phone number because of how we initially defined x and y :-)

Note: The formula shows us that the phone number needs to be exactly seven digits long for the trick to work.
