No one knows. It was possibly before we mastered fire. The theory goes that man was a scavenger when it came to flesh. Some of the meat he scavenged was after a forest fire and he liked the taste. He may have eaten some veggies that got roasted as well. As for the more sophisticated preparations, these may have occurred by way of the shaman or healer. Possibly, as a way to make the medicine taste better.

They learned how to make food out of necessity and so the knowledge developed over thousands of years as people gained more experience with the process.

They killed a dinosaur and accidentally left it outside on a rock on a hot sunny day and when they came outside it was cooked and tasted good.

We have to assume they were hungry . Ate raw meat and thier greens. but Who invented fire to start the cooking process.
