Sorry, I felt the need to add some more.
He can be so simple and elegant. There are various translations of his writing; I am very fond of "The Essential Rumi" translated by Coleman Barks wit John Moyne.
Much of his stuff can be religious, while the other pieces are just simplicity in love or happiness.

Today, like every other day, we wake up empty
and frightened. Don't open the door to the study
and begin reading. Take down a musical instrument.

Let the beauty we love be what we do.
There are hundreds of ways to kneel and kiss the ground.

Beyond our ideas of wrongdoing and rightdoing,
there is a field. I'll meet you there.

When the soul lies down in that grass,
the world is too full to talk about.
Ideas, language, even the phrase "each other"
doesn't make any sense

When I remember your love,
I weep, and when I hear people
talking of you,
Something in my chest,
where nothing much happens now,
moves as in sleep

The second one is my personal favorite.

I have read a few and this is my fav...

you mustn't be afraid of death
you're a deathless soul
you can't be kept in a dark grave
you're filled with God's glow

be happy with your beloved
you can't find any better
the world will shimmer
because of the diamond you hold

when your heart is immersed
in this blissful love
you can easily endure
any bitter face around

in the absence of malice
there is nothing but
happiness and good times
don't dwell in sorrow my friend

This one because it makes me feel closer to God.

Rumi Poem 6
Never be without rememberance of Him,
for His rememberance
gives strength and wings
to the bird of the Spirit.
If that objective of yours
is fully realized, that is
"Light upon Light"...
...But at the very least, by
practicing God's rememberance
your inner being
will be illuminated
little by little and
you will achieve
some measure of detachment
from the world.
