give her a really big and elegant box of chocolate to tell her that you love her very much. choose it carefully and try to get the most fine chocolate box. maybe this chocolate store from amazon can help you choose :
http://astore.amazon.com/chocolate-20 since they allow you to preview 9 items at one screen . good luck and merry Christmas

You want something which shows you understand her tastes, but without looking like it cost enough to make her worry it is inappropriate for her to accept the gift. The perfect thing would be if you know her hobby or something she likes to collect, and buy a nice, but not ostentatious, example of the type. For example, if she has frogs of various art and craft and photograph all over her office, you have an easy one. But it might be something more subtle.

Has she mentioned any hobbies or crafts that are of interest? Do they suggest a really nice coffee mug or other individual gift that she could use in the office. (I am a quilter, for example; a mug with a prize winning quilt depicted on it from the Museum of Quilts would be precious to me.)

Do you know anything of her family life, children? Would she, for example, appreciate a nice hand-made frame for photos of her family on her desk?

But do be careful not to look like you spent too much, and please do not by her anything too personal. Neither would be appropriate for the relationship of a professional nature that you have. She's apparently a very nice lady, but you can't forget she is also your boss.

give a gift that gives back . . . look for handmade items that help support political refugees, buy a cow for a village or donate to any charity in her name. Or give her a stationary set, open it and use the first sheet to write a note about how much you appreciate her, just be sure to spell check

well if shes like your second mother and is really as nice as she sounds you should really do something meaningful. maybe you could give her a gift certificate for a day of pampering OR if thats to personal a gift certificate to her favorite restaurant, and in the card write something like, "you do so much for me, you deserve the same. Take this card as a gift of time spent to relax and enjoy."

hope i helped
