No bodies were ever shown going to the plants. All that was shown was sheets covering what was supposed to be bodies. Since other races were shown in the movie one can only assume that they too went to the suicide centers as well as whites. From there to be processed. For the sake of argument, Hestons' brain guy is the only one shown at one of the centers but his actual body wasn't seen after dying and being covered.

The people who were rounded up to make Soylent Green were usually those who went out in the streets to protest social conditions or otherwise disrupt peace and order. Since minorities are more likely to have grievances against the man, and more reason to act in their own defense, they would be more likely candidates, as the authorities would then be solving two problems at once. Keep in mind, this is pure speculation about a work of fiction. And "minorities" can mean any underprivileged group or class of people, regardless of size or makeup.
