Classical ones are always good to use. A few suggestions I have are Pachabel's Cannon in D or Bach's Air on the G (that's actually a ringtone that came w/ my phone...it's pretty). There are a few others I have in mind but unfortunately I do not know the title or who it is by....I just know them by ear.

(Kinda funny I know all this considering I normally listen to music such as Evanescence, Disturbed & Avenged Sevenfold...haha!)

Find an instrumental version of "At Last" by Etta James. Everyone will know what song it is, and the meaning is so perfect for a wedding!

The music from the Kingdom of Heaven soundtrack is really good, and it's almost all instrumental.

Not really an instrumental, but you can probably get an instrumental version of it...

There's a band from Ireland (Enter The Haggis) that no one on the planet seems to have heard of, but they have this gorgeous song called "Sunburst". It's guitar and violin and completely gorgeous.
