Okay, this is easy. Hands down, the best is the one where Cartman gets that kid to eat his own parents. That was a turning point for the series. I love when they mention in later episodes!
I also loves Woodlands Critter Christmas when everything seems like its going to be okay, then Kenny dies of AIDS.

My favs are the ones where they make fun of the Lord of the Rings, the Mormon religion, Passion of the Christ, and Scientology. Also like the one with the chicken f-er. Sorry, don't know official names of episodes and seasons.

The one where Cartman fell off the bull and thought he was a 14 year-old Vietnamese prostitute named Ming-Lee ("soldier boy! soldier boy!"). And the Chicken 'lover' one, where Cartman does the thing from the show 'Cops.' Oh, and the 'Critter Christmas' one!
