The minutes of a meeting are an instant record of everything that occurs within the meeting. These are usually typed nowadays but originally they were handwritten often using a type of shorthand. Naturally these were often illegible to everyone but the recorder himself so they were written up later in a more presentable text with the original notes being referred to as the minutes. Whilst the modern pronunciation of minutes is the same as the unit of time, it is meant to reflect the size as in miniscule of the original record.

Could be the definition of minute, as in something very small. So, you are takeing(writing down) minute details of what happened.

this is a guess but im thinking minutes meaning miniature or minute details, tto take minute (small) but important issues that are raised ina meeting instead of writing down word for word.
