I suggest you the following easy experiment:

1) Prove what is the relation between buoyancy of eggs in a salt solution analyzing the effect of these two factors in the phenomenon:

a) Concentration of salt in solution (preparing solutions with different concentrations: 1%, 2%, 5%, 10%, etc.)

b) Freshness of eggs. Get a cartoon of eggs in supermarket or directly in the farm. Leave the eggs at room temperature one day, two days, three days an so on... picking up one or two eggs each day and prove buoyancy in salted solutions. You must get at least one fresh egg each day to use it as target or "blank" to compare against the old eggs. Note results each day.

2) You can graphic level of buoyancy each day that pass and against concentration of salted solutions.

3) You must search what is the composition of eggs and what would be the reason that old eggs have a different behaviour than fresh eggs (if any).

4) You can conclude that this test is used widely to prove freshness of eggs proposing an optimal concentration to perform this test.

Hope this experiment helps you!

Good luck!
