This is a great recipe for a Corn Casserole that uses a boxed Cornbread Mix. Dad's Corn Casserole 3 eggs 1 (8 oz.) Onion Dip 1/4 c. butter or margarine, softened 1 (8 1/2 oz.) box cornbread/muffin mix 1/2 tsp. salt 1/2 tsp. pepper 1 can whole kernel corn 1 can cream style corn jalapeno slices, minced, to taste Preheat oven to 350 degrees. Beat eggs in a bowl adding the dip, butter, cornbread mix and spices. Stir in the cans of corn. Pour into a greased 11x7 inch pan and bake uncovered at 350 degrees for 35-40 minutes or until slightly browned and begins to pull away from the side of the pan. Serve warm as a side dish. Easy and delicisous!

Corn Bread is a meal in itself. I love it. It goes with everything. It goes best with Pork Chops, or hot dogs and beans

What DOESN'T go good with cornbread?

Ahhhhh, good fish, pinto beans, use Olivio or Butter - no margarine.

When does it come out of the oven? - I'll be there!

(ps - once had Sunday dinner with a humble family - our meal was Pinto beans, cornbread, butter, and iced tea - and we ate till we were filled!)
