It is fair to mention that this job has been extremely interesting supplemented by the tremendous learning opportunity it has had to offer. However, I am now at the crossroad, where I need to broaden my knowledge and understanding, and this can be done so by seeking new learning opportunities. Bearing this in mind, I regret that I have to offer my resignation. I would only consider myself as lucky if I were to learn half as much as I have over here.

Tell your boss you are happy with the job but look for other work. When other work is confirmed, then tell him you are after a more challenging opportunity and will take time away to decide what to do next.
