"A cave up in the hills," according to the Grateful Dead. In general, a place where you can be alone long enough to make significant changes in your appearance. I have never had to hide from the law, but I think I would do it by signing myself into a fat farm under an assumed name and losing so much weight I would be unrecognizable. This assumes that the reason I was hiding from the law was quite profitable; otherwise why put myself at risk?
Come to the Santa Cruz Mountains and we won't turn you in unless you are really evil. If you are, we may or may not turn you in, but you'd better not come here -- here there be witches. And bikers.
