Leather, different thickness and processing for hard or soft. They also had hand stitched the soles on the expensive types, and modified brad on the cheap ones. The hand stitching lasted while the brads wouldn't and the soles would fall off.

That is a very general question. The exact period, the man's social standing, and the country would determine what his shoes were made out of. Tudor, Elizabethan, Renaissance (to name a few) were all different styles during the 1500's. A peasant wore different materials and fabrics than the nobles. Then what was available was different for each country for locally made materials.

in 1500 i think people used to wear shoes made of animal skin ( rich people) or wooden slippers(poor people).
