I own and ride an ex-racer.
I am not sure what you mean by re mouth the horse.
I started mine fresh off the track in a french link snaffle bit and that is what we still use today. In fact all of my horses ride with that type of bit.
Look at yahoo groups there is a great board for ex-racers and retraining them. I think it is retrainstbs
It is a list for people who have purchased race horses and are going to re train them They have lots of good experience and the people really know their stuff on the board. There are people who are in the racing industry and trainers and just everyday owners.Lots of good info.
When I restart one I just start with the french link bit and ride only in the arena. If they lean on the bit we work at teaching them to lower their heads and not to balance on the bit. It takes lots of time to get them to understand that they are not to lean on the bit for balance
Good luck.

Have you seen a 'lungie bungie'? I have not used one but came across this site when looking for a German martingale. Helps to develop the 'lateral' mouth and teach the horse to not lean into the bit as racehorses are so apt to do.

You might want to try looking for a bulliten board on re-schooling ex-racehorses. I know there are such things out there.
Sorry i couldn't be more helpful.
