INGREDIENTS:
-5- to 7-pound fresh (or frozen and thawed) turkey breast
-Kosher salt and ground pepper
-Dried herbs and spices of choice:
(sage, thyme, garlic powder, onion powder)
Vegetable oil

Preheat the oven to 325 degrees F.

Brush the turkey breast with vegetable oil. Sprinkle liberally with salt, pepper, herbs, and spices.

Insert meat thermometer to the center of the breast. Wrap and seal the breast in extra-heavy aluminum foil, with the face of the meat thermometer on the outside of the foil for viewing. Place on a wire rack in a shallow roasting pan.

Roast the turkey breast until the meat thermometer reaches 170 degrees F. (about 2 to 2-3/4 hours). Open the aluminum foil about 30 minutes before the breast is done and baste 2 times with the drippings.

Make sure the turkey is thawed properly, then put it in a foiled lined roasting pan, and season with you favorite seasonings, we use garlic and onion powder, put water in the bottom of the pan, then cover with foil, and poke small holes into the top foil for steam to escape, bake at 325 degree oven, about every 45 mins, baste the turkey, and recover, this will keep the turkey moist. About a half hour before the turkey is done remove the top foil, so the turkey can brown. It will be tender and delicious. Happy Cooking and Happy Holidays. P.S. The cooking time varies depending on the size of your turkey, it should say on the label how long to cook, make sure the turkey is brown and not pink.

Roast Turkey Breast with Chipotle-Herb Rub
4-6 Pounds TURKEY BREAST fresh or thawed
2 chipotle peppers rehydrated, stemmed & seeded
1/4 Cup fresh parsley
1/4 Cup fresh cilantro
4 Sprigs fresh thyme
2 Cloves garlic
1/2 Teaspoon salt
1/2 Teaspoon freshly ground black pepper
1 Teaspoon olive oil
Preheat the oven to 325?F. Rinse the turkey breast under cold running
water and pat dry with paper towels. Place it on a rack in a shallow
baking dish and set aside.
Combine chipotle pepper, herbs, garlic, salt and pepper with a mortar
and pestle or chop them on a cutting board until a paste is formed.
Add olive oil to the mortar and pestle or transfer mixture to a small
bowl and add the olive oil.
Rub turkey breast with chipotle paste. Carefully slip your fingers
under the skin and put more paste between the skin and the turkey
meat.
Roast the turkey in the oven for about 2 hours or until a thermometer
inserted into the thickest part of the breast registers 170?F. Let
the turkey rest at room temperature for about 15 minutes before
carving.

at first make sure you get all the gizzards and suck out of the inside,then add water to cover about a 2 inches of the turkey,add about a stick of butter to the inside of it,add rub butter all over the turkey too,and cover it to cook it,I check it always around and half hour to baste it with the broth the turkey is makeing....with this method I never ever had a dry turkey ,a very moisture turkey, when the inside turkey is 160 take it out cause the turkey does continue to cook after you take it out,some turkey has a pop out thing that also tells you its done to,, the 20 minutes uncover the turky and a little more butter and the turkey will brown beutafully

cook turkey low and slow. 325 degrees keep the turkey breast covered with foil until almost completely cooked. Use a meat thermometer to make sure it's fully cooked. never eat raw poultry.

Go buy a Reynolds Oven Bag. The directions are on the back of the box. Cooks in half the time, moist, and not as messy.

I cook almost everything in the crockpot. for something bigger , I use a turkey cooker, walmart has them for about $20, and I put it in the garage so it doesn't heat up the house
