Grind the following ingredients into a thick paste (The quantity can be adjusted proportion to the amount of fish you are preparing. This qty is for one 100 Gm size fillet)

A tablespoon full of fresh lemmon juice.
10 leaves of fresh Corriander
10 leaves of fresh Mint
2 cloves of garlic
A teaspoon size fresh ginger root
1/4 teaspoon of Orregano
1 tablespoon of water
Salt to taste

When the paste is done, keep it aside.

Cut a square piece of alluminium foil, about one sqaure foot. Spread some butter or olive oil in the middle part of the foil. Then place your Haddock fillet on top of this part. Cover the exposed portion of the fillet with the paste mixture. Use the side of the foil to wrap the fish completely.

Grill for about 15 minutes. Open the foil and let the paste become a bit crispy.

Your Haddock is ready to be served with either mixed vegetables or rice pilaf.

Accompanied with some white Chardonnay? A meal fit for a king!

When I do this recipe I usually cook for 8 or 10 people if your cooking for less you could probably use a frying pan I like cooking this outside on the BBQ, because you don't get that fishes smell in you kitchen. butter the bottom of a roasting pan that just fits the fillets arrange the fillets close together but not touching sprinkle with salt and pepper place in a hot gas BBQ or over 2 med-high to high burners when butter begins to sizzle add white wine to come half way up the fish fillets, top with chopped basil or dill-weed cover and let cook for 10 to 20 minutes when the fillets flake easily fish is done

Blackened Fish


Serves 3.
1-1/2 pound fish fillets
1 cup milk
Blackened Seasoning
3 tablespoons cooking oil
3 tablespoons butter

Cut the fish, if not already, into fillets that are approximately 1/2" thick.
Soak in milk for ~15 minutes then pat both sides down with Blackened seasoning.
Heat oil and butter together in a pan and then sauté fillets for 5 minutes on each side.

Rub juice of one lime and 1 tsp.salt on the fillet and keep. Make paste of one inch ginger, 4/5 flakes garlic(if eating) one green chilly, few sprigs of fresh coriander leaves, in a blender. Apply over the salted fillet. In a baking dish slice one onion and put the marinated haddock over it. Bake covered in the oven for 20 minuted at 200 degrees. Serve hot with wilted spinach and slice of lime. (For two fillets)

Keep it simple. Put some butter in an ovenproof dish, add the fish, season with dill and black pepper, cover with foil and bake for 20 mins. Serve with boiled potatoes, broccoli or other fave veg and a wedge of fresh lemon - delicious!

I just answered a question about how to cook carrots and it's great because I told her to make my favorite guiness glazed carrots and my favorite thing to have with them is guiness glazed fish- it's so simple and tasty. just gently cook your fish in a sautee pan until almost done but not quite. In a saucepan mix a couple guiness and a little honey- to your taste obviously. bring to a boil then turn down to a simmer and let it cook till it reduces by half (more or less depending on how you like the consistency) then boil your carrots (cut length wise) then sautee carrots and fish in guiness glaze for a couple minutes till they're coated! Sooooo tastey!

cover in lemon juice, roll in a mixture of fresh herbs eg tarragon, thyme, basil etc, then wrap 2-3 slices of parma ham round it to make a parcel and completely cover the fish. Place in an oven proof dish with a little white wine, cover with foil, and cook for about 20 mins in the oven at about 180c, yum!

sprinkle with salt and pepper and place in a skillet with warm olive oil; cook for 4-6 minutes.
flip the fish, place skillet in a 400 degree oven for 10 minutes..
It is the best way to cook a fish that already has a great flavor!!

OOh Lovely. They should be cooked really simply. Poach or steam gently - dont overcook and serve on a bed of spinach with a poached egg on top ! Delicious.
